Happy Anniversary DH

Since DH and I didn’t exactly see each other on our 26th wedding anniversary the other day I thought I’d at least mark the occasion here.  I was down with a migraine and went to bed at supper time. When he got home from work later that evening I was fast asleep and only remember vaguely mumbling goodnight.  That was it.

The little figurine is from our wedding cake.  I found it in an antique shop waaay back then – so like us they are  much older now but still living happily ever after.

On my way back from grocery shopping this morning I hit a garage sale.  Found this lovely square embroidered tablecloth for a dollar.  It had a bit of staining on the outside edge but that’s gone now it’s washed, re-hemmed and on my table.

Purple Trillium

Yesterday wee Jake and I took a walk in the woods and were thrilled to find this gorgeous purple trillium in bloom. 

For twenty five years I had the same small clump of this beautiful wildflower on our property.  Two years ago a deer chewed the clump off right down to the ground.  I was devastated. 

Nature is truly wondrous! Since that happened there are purple trilliums spreading everywhere.

And if you can read Dutch there’s another fantastic treat for you.   Ria has a recipe blog!  Here’s a question maybe you, my dear readers, can help me with.  There isn’t anywhere on that site to enable me to translate it, so does Ria have to install Google Translate or is there a way that a reader can do it when visiting a site?  How sad is it that DH and I kept ourselves quite amused on a Saturday night trying to figure out the Dutch ingredient lists.   Oh well, in a couple of weeks we will have been married for twenty six years so hopefully many of you can relate. 

Just in case your thinking I haven’t been taking ‘time to stitch’.  I have to tell you that, yes I have been.  Actually, I have had to reach ‘way back’ into my educational years and relearn a very specific skill and it has not been easy…

…colouring inside the lines.

Easter Sunday

Lemony Goodness

Lemons were on sale this week so I bought a few to make my favourite treat.  This lemon curd or lemon butter recipe can be used for an Easter tart filling, for meringue shells, on scones or muffins, or as a cake filling.  Or my favourite spread on toast or right out of the jar on a spoon!

This is a fast, foolproof and extra lemony flavoured recipe  lower in sugar and butter than older recipes. I cut it out of Homemaker’s Magazine years ago.

Microwave Lemon Curd

Makes 1-1/2 cups

3   eggs

3/4  cup granulated sugar

1  tbsp or more grated lemon rind

1/2  cup  fresh squeezed lemon juice  (uses about 2-3 lemons)

2   tbsp soft butter

In a microwavable bowl, whisk together eggs and sugar.  Whisk in lemon rind, lemon juice and butter.  Microwave for one minute med-high then whisk, then again for one minute you want to get this up to boiling but try to do this a bit at a time at first so you don’t just cook the eggs solid right away.  Then again 2  minutes  on High until it boils and thickens slightly. Whisk again until smooth.  Let cool, then refrigerate (it will thicken a lot more as it chills). May be stored in covered jar in refrigerator for up to one week.
